Green Olive at Red Hill
“From our farm to your plate — every bite is a taste of the Mornington Peninsula.”
Green Olive is located in Red Hill, in the heart of the Mornington Peninsula. The farm is surrounded by olive trees, vineyards, native gardens, and paddocks that supply the kitchen with fresh produce daily.
A true farm-to-plate experience, Green Olive combines sustainable farming, flavour, and community. Everything on the menu reflects the land it’s grown on — from slow-cooked lamb to native bush ingredients. Guests are welcomed into the rhythms of the farm, with meals that connect them to place.
- Seasonal vegetables, herbs, and native bush foods are grown onsite in kitchen gardens, paddocks, and greenhouses.
- Five olive varieties — Frantoio, Leccino, Picual, Manzanilla, and Kalamata — are harvested by hand and made into extra virgin olive oil and table olives.
- The farm’s Bush Food Garden features native ingredients like lemon myrtle, finger lime, and pepperberry, used in products such as their new Native Salt.
- Farm-Made Relishes & Marmalades – Crafted in-house from garden produce and served on grazing plates or available to take home.
- Estate Grown Wine – Pinot Noir and Pinot Grigio grapes grown on the farm and made in partnership with Passing Clouds winery.
- Farm-Raised Lamb – Wiltshire sheep raised onsite provide the lamb for Green Olive’s signature slow-cooked dish.
- Victorian Cheese – Sourced from local artisan cheesemakers to complement the seasonal grazing experience.

Ten Minutes by Tractor
“A wine is only as honest as the place it comes from.”
Ten Minutes by Tractor is located in Main Ridge on the Mornington Peninsula. Their vineyards extend across Main Ridge, Merricks, and Tuerong — each just ten minutes apart.
What began as three family-run vineyards has grown into one of the Peninsula’s most respected wine producers. The name “Ten Minutes by Tractor” nods to how closely connected their original sites are — and reflects a philosophy deeply rooted in place. With sustainable farming and precision winemaking, each wine they produce expresses the unique character of its vineyard.

Payten and Jones
“Serious wines made by not-so-serious people — where wild ferments, street art, and good times collide in the Yarra Valley.”
Located in the heart of Healesville, Payten & Jones is a vibrant and rebellious Yarra Valley winery, just a short stroll from other local food, wine, and gin institutions. Their wines are made from five sustainably farmed vineyards across the region, and their cellar door offers a relaxed, local vibe unlike any other.
The contemporary cellar door doubles as a local hangout and a street art gallery. Affectionately nicknamed “Payto’s Doghouse,” the space includes a casual tasting bar, picnic tables, and a curated drinks list— all served with good tunes in the background.
High school mates Behn Payten and Troy Jones founded the winery in 2006 with nothing but passion and a laid-back, rule-breaking attitude. Behn, a long-time production winemaker, and Troy, with roots in high-end hospitality and Four Pillars Gin, brought together a community-driven, minimal-intervention winemaking philosophy. With help from Behn’s father — a respected viticultural consultant — the team crafts wines that reflect personality, place, and an ever-curious spirit.
The wines are made using a “hands-off” approach — wild fermentation, minimal additives, and a focus on vineyard expression. All fruit is locally and sustainably grown across five different Yarra Valley vineyards. Each wine tells its own story, right down to its custom label design.
Expect small-batch, site-specific wines that are unfiltered and full of personality. The Pinot Noir and Chardonnay are highlights, with playful experimental blends and naturally made wines adding an edge to the lineup.
The Spanish vermouth, definitely is a favoured and unique drop for many.

Trofeo Estate

Set among rolling vines on the Mornington Peninsula, Trofeo Estate is a single-vineyard winery nestled between Dromana and Red Hill. With a strong commitment to sustainability, all wines are estate-grown, and the property also features a charming cellar door and restaurant overlooking the vineyard.
The cellar door and onsite restaurant overlook serene vineyard views, offering a refined yet welcoming atmosphere. Trofeo also features house-made products such as focaccia made with estate wine, quince paste from homegrown fruit, and cheese boards highlighting local suppliers like Boatshed and Main Ridge. Guests can enjoy a broader taste of the region, with local craft beers (Jetty Road and Red Hill) and Cuvee chocolate also featured.
Trofeo Estate is a proudly family-owned winery known for its organic and biodynamic farming practices. As the largest producer of terracotta-aged wine in the Southern Hemisphere, Trofeo revives the ancient method of fermenting and maturing wine in clay amphorae. The approach allows pure varietal expression — free from oak influence — and reflects their philosophy of minimal intervention and maximum respect for the land.
All wines are made exclusively from fruit grown on-site, ensuring full control from vine to bottle. The estate follows organic and biodynamic principles to preserve soil health and express true terroir. Wines are 100% vegan-friendly and crafted with a commitment to purity, sustainability, and authenticity.
Terracotta-aged Pinot Noir, Chardonnay, and Shiraz are standout offerings, known for their clean, fruit-driven character. Trofeo’s range also includes sparkling wines and elegant Rosé, all offering a distinctive sense of place without the influence of oak.
